Crispy Courgette Chips

You may find that your opinion of the humble Courgette goes up after trying this very simple side dish. Perfect with a piece of grilled meaty fish such as Tuna or Sea Bass.


225g Courgette

1 1/2 tbsp of plain flour

Vegetable oil for deep frying

2 tbsp of finely grated Grana Padano


1. Slice the courgettes in to 3mm by 7cm long chips. Place the flour into a bowl and slowly beat in 50ml of water to make a smooth paste.

2. Half fill the saucepan with the vegetable oil, Place on a high heat until the oil is 180oC. Drop half of the chips into the batter and turn to coat, then using a fish slice, lift the courgettes out of the batter allowing the excess batter to drip off.

3. Carefully drop the courgettes in to the oil and cook for 1-2 minutes until golden.

4. Remove from the hot oil, allowing any excess oil to drip off the toss the courgettes in with the grated cheese while still hot, season well with crack black pepper. Repeat with the rest of the courgettes and serve immediately.
